Silid | Must-try Filipino Fusion Café in Silang, Cavite

Silid is a local café in Silang, Cavite, specializing Filipino fusion dishes and drinks, using popular local flavors and incorporating them into international cuisine. They started operations last May 2023.
Silid features a minimalist and traditional interior. The space is divided into three main sections: the coffee nook, the main dining area with regular table seating, and at the far end, a section for low table seating.
Silid also has an al fresco section.
Silid’s menu includes all-day breakfast, pasta dishes, mains, and snacks. Silid also offer classic coffee options and Silid’s fusion coffee drinks, tea and “tsokolate”, or local chocolate drink.
We started our Silid experience with a best seller from “meryenda” option. Turon Toast, a French toast with banana-jackfruit jam. It should come with chips but unfortunately, they were out of stock during our visit.
We also availed the Bibingka Hour promo. An order of Bibingka Pancake includes a coffee or tsokolate. We chose “Sikwate”, a hot chocolate using Davao Tablea.

Separately, we also ordered the cold version - Iced Tsokolate.
We tried two main dish from Silid. The first one was a best-seller, Bicol Katsu. This dish is a fusion of the Japanese Curry Katsu, but instead of curry, Silid uses the famous “gata” sauce from Bicol.
The next dish we tried was Silid Inasal, served with “aligue” fried rice. One of the non-fusion dish on Silid’s menu.
We had the opportunity to try two pasta dishes of Silid. The first one was the Creamy Binagoongan Pasta, a unique fusion dish using Pork Binagoongan as a pasta sauce.
The second pasta we tried in Silid was Longanese Pasta, a seasonal dish and not part of the menu.
We sampled one Silid’s specialty coffee, Kape’t Gulaman. This is an ice coffee with coffee jelly and muscovado syrup.
We found out that Silid updated their offerings (June 2025), giving us another reason to revisit this café. On this visit, we sampled their new creations.
We started with the Pares Dynamite, six chili rolls with braised beef, served with pares sauce and Marie Rose dip.
We also tried two mains: Atchara Rice with Liempo and Kare Kare Bola Bola.
The Atchara Rice with Liempo is serve in a bowl. Fried rice topped with savory pork belly. Presented in a donburi or the Japanese rice bowls style. This is one of my favorite here in Silid.
Next is the Kare Kare Bola Bola, their rendition of a traditional Filipino dish. Instead of oxtail, they used meatballs, paired with bagoong fried rice.
For dessert, we ordered our favorite Turon Toast. The serving was different from our initial experience but this time we leveled it up by making it a la mode.
For coffee, we had the Kape’t Gulaman, which I’ve covered before. The new drinks are, Taho Latte. A fusion of coffee and a traditional Filipino morning drink.

Fusing Filipino flavors to popular international dishes and drinks is an attractive concept, but what stood out most was how Silid manage to created enjoyable and satisfying dishes. With this, Silid is a must-try café when in Silang, Cavite.
