Rumba, a newly opened Mediterranean restaurant situated at The Shops in Ayala Triangle, Makati, is part of the Bistronomia. Bistronomia, is a collection of boutique Spanish restaurants under The Bistro Group umbrella. The inspiration behind Rumba’s concept came from Chef Alfredo Rodriguez Sangrador, who also serves as the Head Chef of Bistronomia.
The high end interior of Rumba is a combination of wood, tiles and metal that creates a cohesive Mediterranean ambiance. The section near the entrance, you’ll find a floor to ceiling window that illuminates the dining area with natural light. Meanwhile, at the far section of the restaurant, a more secluded area offers a little bit of privacy. Rumba also features an elevated platform dedicated to the bar and the open kitchen section.
Rumba’s food inspiration came from nations surrounding the Mediterranean Sea. This consists of dishes from Spain, Italy, Greece, and France. Rumba also cooked most of their dishes in a charcoal oven to have the distinct smoky taste. During our visit, we tried several options on their Prime Lunch Sets.
We started our Rumba experience with a complimentary bread and 2 flavors of butter.
I ordered Amatriciana which is Penne Amatriciana,
served with Tuna Tartar and thinly sliced breads.
The Pollo option is Gyro de Pollo,
with Mediterranean Green Salad.
While Pescado is a Grilled Salmon with vegetables,
and comes with Hummus and nachos on the side.
For sharing, our group ordered the Del Senorito under Arroces Al Carbon option. This is Rumba’s version of a seafood paella.
To summarize our experience, we barely scratch the surface of what Rumba has to offer since we opted for their budget-friendly option. Despite this choice, we were surprised by the decent portions and delightful flavors of each dish. The highlight of our Rumba experience was the Del Senorito. It is important to mention that the Prime Lunch Sets are priced at PHP795.00 excluding service charge.
On our second visit to Rumba, we had the opportunity to try most of their offerings. With this, it is just right to update this blog with a more detailed review of our experience.
We ordered several dishes from the tapas selection, starting with Croquetas Pollo y Jamón, which had chicken and ham fillings.
Croquetas de Boletus, made with mushrooms.
Hummus, already covered in our first visit.
Calamar Andaluza, a deep-fried squid served with kimchi mayo.
Chorizo Criollo, a grilled chorizo with chimichurri sauce, served with bread and sweet potato.
Tataki de Atún (Tuna Tataki) with an avocado mixture topped with tomatoes.
Patatas con Trufa y Parmesano or cheesy truffle potatoes.
Mixto Platter includes a selection of chorizo, Iberian ham, salchichón, parmesan, manchego, and brie.
Tortilla Bacalao, a Spanish omelette made with codfish and potatoes.
For pasta and pizzas, we tried the Beef Lasagna.
Sausage Deep Dish Pizza made with Spanish sausages, cherry tomatoes, and mozzarella.
and Vongole Linguine, an oil-based pasta topped with clams.
While we already tried the Del Señorito Paella during our first visit, we ordered it again.
We also sampled the Negra con Gambas (squid ink rice),
and the Mar y Montaña, which included chicken drumsticks.
From the Carne selection, we ordered the Pollo, chicken cooked in a cast-iron pot,
and the Beef Salpicao.
The highlight of our Rumba experience was a holiday special: the Porchetta, a slow-roasted pork belly.
For drinks, we ordered the unlimited Calamansi Iced Tea.
While Rumba is a little bit on the expensive side, this restaurant is ideal choice for special occasions, business meetings or anyone seeking high-quality Mediterranean cuisine in Makati.
Recommendation: Porchetta
